先前的研究指出,大豆蛋白降低血漿膽固醇濃度的可能機制之一,

是由於大豆蛋白在腸道中扮演膳食纖維的角色,與膽酸結合、促進糞便 中膽酸的排出,加速肝臟中膽固醇再合成膽酸的速率,進而降低血漿膽 固醇濃度 (Chen et al., 2003)。然而,由本次的實驗結果指出,飲食中 大豆蛋白的攝取,並不會增加糞便中中性固醇與膽酸的排出,但仍可顯 著降低血漿與肝臟膽固醇濃度及三酸甘油酯濃度,因此推測,市售大豆 蛋白降低血脂質的作用機轉並非藉由促進脂質的排出,而是降低脂質的 合成,但仍需進一步的研究來加以證實。

飲食中以 50% 大豆蛋白取代酪蛋白,可降低血漿膽固醇與肝臟膽 固醇濃度及三酸甘油酯濃度。大豆蛋白食用量經換算,體重 60 公斤成 人每天攝取 25 公克大豆蛋白,即可達到降低血膽固醇的效果。認為可 進一步應用於心血管疾病的預防。
