Seven times! Why?
Mr Ng:
Because I didn’t have a licence to be a hawker. I just want to make my egg waffles so I can get some money. But the government said I needed a hawker licence and they arrested me.
Cooking Monthly:
Did you have to pay fines too?
Mr Ng:
Yes, I had to pay big fines. I don’t have much money left to give to my family in mainland China.
Cooking Monthly:
I’m sorry about that. I hope you sell lots of waffles every day so you can support your family.
74-year-old Ng Yuk-fai talks about his life as an egg waffle master.
Cooking Monthly:
You are called ‘Uncle Egg Waffle’. Why is that?
Mr Ng:
Because I love making egg waffles!
Cooking Monthly:
They are my favourite! How long have you been making waffles?
Mr Ng:
I’ve been making waffles for 30 years.
I learnt how to make them from my uncle.
Cooking Monthly:
That’s a long time. Where’s your shop?
Mr Ng:
I don’t have a shop. I have a cart where I cook my waffles. I push my cart to different places to sell my waffles.
I can sell 400 waffles on a busy day.
Cooking Monthly:
I heard you had some problems in 2011. What happened?
Mr Ng:
Well, the government took away my cart seven times last year.
