本研究以產孢性乳酸菌 S. inulinus BCRC 14647 作為試驗菌株,對其在 耐酸性、耐膽鹽、模擬腸道吸附性、對 S. enteritidis BCRC 10744 的拮抗性 以及菌株安全性等表現其潛在益生功效之基本特性進行探討,並與四種常 用之益生菌就上述試驗性質做比較,總結試驗之結果如下:

(1)於所有試驗之乳酸菌株中,孢子形態的 S. inulinus BCRC 14647 表現出僅 次於 L. acidophilus BCRC 10695 及 L. bulgaricus BCRC 14009 之耐酸性,

而膽鹽耐性則是僅次於 L. acidophilus BCRC 10695。

(2)具酸與膽鹽耐受性的孢子形態 S. inulinus 對 Caco-2 cells 的吸附性極低 (10.5%),而其營養細胞則有中等程度的吸附性(65.1%)。

(3) S. inulinus 可產生高量的乳酸,能有效抑制 S. enteritidis 的生長,其培 養基上清液或菌體本身亦能有效抑制 S. enteritidis 對 Caco-2 cells 的吸附。

(4)預先以 S. inulinus 吸附於 Caco-2 cells 上可減少 S. enteritidis 對模擬腸道 細胞的吸附。

(5)由本研究的結果推斷,S. inulinus 預先定殖於腸道(prophylactic effect)或 是用於 S. enteritidis 之感染治療上(therapeutic effect),S. inulinus 均具有潛 在之益生功效。

(6)於生體外試驗得知 S. inulinus 並不具細胞侵入性,因此初步推論其對人 體不具腸道侵襲性。

(7)雖然營養細胞形態的 S. inulinus 其酸與膽鹽性耐受性不如孢子形態的 S.

inulinus,但由於營養細胞形態的 S. inulinus 能夠吸附於模擬人類腸道細胞 並拮抗腸炎沙門氏菌,諸多基本特性與其他試驗之益生菌類似,因此具有 潛在之益生功效。
