全台灣現在有200 多萬路跑人口,且持續成長中;再加上自行車人口 估計已破百萬。隨著運動人口數的增加,運動飲料銷售量大幅提升。隨著 近年消費者健康意識提升,運動飲料也走健康補給風。
研究顯示,運動前和運動期間給予支鏈胺基酸補充,可避免中樞疲勞,
改善耐力運動的表現 (溫 1997;林 2010; Campos-Ferraz et al., 2013;
Monteiro et al.,2009;Choi et al.,2013)。截至 2013 年 4 月為止,經衛生署食 品藥物管理局核可的抗疲勞功能保健食品,共8 項主要產品為:雞精、冬 蟲夏草菌絲體粉末膠囊、人蔘及蜆精。有關抗疲勞保健食品的有效成分為:
總支鏈胺基酸(白胺酸、異白胺酸、纈胺酸)、腺苷和甘露醇、人蔘配醣體、

試驗顯示菇柄及其副產物富含蛋白質、多醣及胺基酸,營養成分與菇 傘成分相似,具再利用價值。研發之菇類胺基酸運動補充品配方,是以非 化學萃取方式進行即可獲得游離態胺基酸,無需酵素或酸水解。菇類胺基 酸運動補充品配方萃取物,含有完整的必須胺基酸,尤其是黃金比例的支 鏈胺基酸,豐富天然麩胺酸、多醣體、多酚類成分及高抗氧化力 (表七、
八),製成晶凍產品,可以補充耐力運動者的體力,產品劑型方便攜帶,如

結 語
菇蕈類品種多樣,成分種類特殊而多元,菇類多醣、多酚類、胺基酸、
麥角固醇、三萜類等等,這些成分因品種、栽培季節,甚至是栽培基質不 同,含量會有多寡的差異。研究菇蕈類產品的機能性成分,以科學數據證 實其功效性及可利用性,開發多樣性高附加價值產品,有助於支持國內菇 蕈類產業永續發展。
