RESTAURANTS AND SIMILAR ESTABLISHMENTS SURVEY
A total of 2,112 restaurants & similar establishments were operating in 2014, up by 194 year-on-year, comprising 2,043 restaurants, eating and drinking places and 69 cooked-food stalls in municipal markets. Number of persons engaged totalled 30,401, up by 16.6% year-on-year.
Supported by the continuous increase in inbound visitors and the popularity of eating-out among local residents, receipts of restaurants and similar establishments went up by 14.6% year-on-year to MOP 9.63 billion. Expenditure increased by 17.6% to MOP 9.12 billion, of which Purchase of Goods, Compensation of Employees and Operating Expenses rose by 9.7%, 21.5% and 25.4% respectively year-on-year.

Receipts and Expenditure of Chinese Restaurants by Number of Persons Engaged
Local-style teahouses and congee & noodle shops with less than 5 persons engaged were in majority at 285 (-18), taking up 35.0%
of total. Number of employees totalled 530, sharing 67.3% of number of persons engaged, which was the lowest across the same size of restaurants, eating and drinking places. Despite of a 5.9% decrease in the number of small establishments, their receipts and expenditure went up by 8.4% and 22.8% respectively year-on-year.

Gross Surplus Ratio (-15.9 percentage points) and Gross Surplus-Expenditure Ratio (-19.8 percentage points) recorded the deepest year-on-year decline among all restaurants, eating and drinking places, reflecting a slowdown in cost efficiency from 2013.
There were 52 coffee shops with 5 to 9 persons engaged, up by 27 year-on-year. Number of persons engaged increased significantly by 103.4%, whereas receipts (MOP 142 million) went up by 9.4%.
‧ There were 35 fast-food restaurants, an increase of 1 year-on- year. Number of persons engaged decreased by 1.1% to 1,254, of which employees (1,249) accounted for 99.6% of total, this ratio was the highest among all restaurants, eating and drinking places.

Receipts and Expenditure of Japanese and Korean Restaurants by Number of Persons Engaged
Number of Western restaurants totalled 177, increased by 24 year-on-year. Gross Surplus (MOP 79.09 million) and Gross Surplus Ratio (6.7%) registered year-on-year decrease of 13.8%
and 1.9 percentage points respectively.

There were 25 Western restaurants with 30 or more persons engaged, a decrease of 1 over 2013, and their receipts (47.7% of total) and expenditure (46.9% of total) rose by 14.4% and 13.8%
respectively year-on-year. Moreover, Gross Surplus and Gross Surplus Ratio of these establishments were the highest among all Western restaurants.
Number of coffee shops (117) and persons engaged (853) soared by 62.5% and 68.9% respectively year-on-year. Operating Expenses surged by 43.7% to MOP 93.37 million, of which expenses on fuels jumped by 160.8%.

However, Gross Surplus rose by 21.5% to MOP 55.14 million; Gross Surplus Ratio and Gross Surplus- Expenditure Ratio were the highest among all restaurants, eating and drinking places, at 9.2% and 10.1% respectively.

Among different types of restaurants, eating and drinking places, Gross Value Added of Chinese restaurants topped at MOP 1.40 billion, while the largest growth rate (+ 34.9%) was recorded in Japanese and Korean restaurants.
‧ With the exception of bars & lounges, the Average Value Added per Person Engaged for restaurants, eating and drinking places was above MOP 100,000, among them the average for Western restaurants was the highest, up slightly by 0.7% to MOP 147,000, while that of coffee shops fell by 41.3% to MOP 120,000.

In this survey, full enumeration was carried out for fast-food restaurants and restaurants, eating and drinking places with 20 or more persons engaged. Meanwhile, samples of cooked-food stalls and restaurants, eating and drinking places with less than 20 persons engaged are selected by stratified random sampling method according to "types of restaurants, eating and drinking places" and "number of persons engaged".

Sampling Scheme and Inference of Results
Coverage of the survey comprises licensed restaurants, eating places, drinking places, as well as cooked-food stalls in municipal markets in the reference year, excluding those restaurants and similar facilities operated directly by hotels and casinos, as well as street hawkers. The list of establishments is originated from the Statistics and Census Service (DSEC) and supplemented with information from the Civic and Municipal Affairs Bureau, the Macao Government Tourist Office and the Financial Services Bureau.

Expenditure: Includes compensation of employees, purchase of goods & services, commission and operating expenses.
Establishment: An economic unit which engaging in one or predominantly one kind of economic activity at a single location.
Purchase of Goods: Goods purchased for resale purpose.
Receipts: Receipts from sales of food & beverages and other receipts, before deduction of costs, excluding interest received and insurance claims.
Gross Value Added: Equals receipts, plus changes in inventories, minus purchases of goods and services for sale, commission paid and operating expenses.
Gross Surplus-Expenditure Ratio: Gross Surplus divided by expenditure and multiplied by 100%. The higher the ratio, the more cost- effectiveness is for an establishment.
Gross Surplus Ratio: Gross Surplus divided by receipts and multiplied by 100%. The higher the ratio, the more efficient a business is in converting receipts into Gross Surplus.
Gross Surplus: Equals receipts, plus changes in inventories, minus expenditure.
Average Value Added per Person Engaged: Gross Value Added divided by number of persons engaged. An indicator to measure the sectoral contribution of each person engaged to the economy.
Gross Fixed Capital Formation: Equals the value of total acquisitions of new, used and self-produced fixed assets, less the proceeds from sales of fixed assets. Fixed assets include buildings, furniture, machinery and equipment, vehicles and other durable goods with a usable life span of one year or more. Also included are major repairs, alterations and extensions made to existing assets.
Compensation of Employees: The sum of wages and salaries, payments in kind, and other benefits paid to employees.
Persons Engaged: All individuals who work for the establishment as at the last working day of the reference year, including employees and unpaid workers, but excluding individuals who are absent for an indefinite period.
